Move over banana bread, there’s a new lockdown recipe doing the rounds on social media and this one involves cheese and pasta, need we say more?
Made viral over on TikTok (does it make us sound like your nan when we say we haven’t actually got the app downloaded on our phones?), we actually spied this baked feta and cheese pasta dish via a few friends on Instagram Stories over the weekend, and not only does it look heavenly, it’s really incredibly simple.
A block of feta, a bag of cherry tomatoes, and a good glug of olive oil get tossed together in a roasting tin along with salt and pepper and are cooked for half an hour, or until the cheese feels soft. It’s then kinda mashed together (a back of a fork should do the trick) and combined with whatever your pasta of choice is (and maybe a few spoons worth of pasta water to loosen it up. You can also add fresh basil, grated parmesan, or add some whole cloves of garlic to the roasting tin for more flavour. It’s the feta, tomatoes and pasta that are kinda like the core ingredients and then the rest? Well that’s entirely up to you.

There’s a few conflicting reports of where the recipe first came from (namely because it’s so simple, there’s lots of similar variations), but Finnish blogger Tiiu Piret created one with prosecco in 2018 (recipe here), whilst Jenni Häyrinen (also a Finnish blogger), created the quicker, shorter version in 2019.
So the rumour goes, the pasta craze proved so popular in Finland that some stores actually ran out of feta – it’s meant to be that good.
