Alongside baby/toddler chat and Leopard article ideas, one thing that dominates our WhatsApp chat is what we’re cooking for dinner on any given night. Specifically, what we’re cooking from Rukmini Iyer’s Roasting Tin book series, which we both rely on at least four nights a week. We’ve already waxed lyrical about Iyer’s game-changing books (and yes, we stand by that hyperbolic headline), so we couldn’t be more excited about her latest, The Green Barbecue: Modern Vegan & Vegetarian Recipes to Cook Outdoors & In, which launches tomorrow.
Perfectly timed for the bank holiday weekend (and impending BBQ season) The Green Barbecue isn’t your average grill recipe book – mainly because it’s completely plant-based. While the idea of a meat-free BBQ might seem like sacrilege to some, if you’re familiar with Iyer’s recipes, you’ll know she’s something of a wizard when it comes to making vegetables the main event – we both have an unhealthy addiction to her spicy harissa sprouts, broccoli, halloumi and spinach.

Packed with 75 mouth-watering recipes, BBQ’ing Iyer-style might not be quite as simple as chucking some pre-made sausages and burgers on the grill (and hoping you don’t get food poisoning), the meals are quick, easy and designed to take the challenge out of meat-free cooking. We’re already salivating at the thought of the aubergine and goats cheese stacks with honey and thyme, barbecued corn with ginger, peanut and chilli dressing and, if a BBQ isn’t a BBQ without a burger, the chipotle mushroom and black bean patties with peanut and lime make a strong contender for the real deal.
